- 1961年12月16日に奈良県で誕生 Hiroshi Sasaki was born on 16th December, 1961, in Nara.
- 高校卒業後、18歳から料理の道に入り各店で修行する。 After finishing high school, Sasaki entered the culinary world at the age of 18.
- 1988年（27歳）店長兼料理長を任される。 At the age of 27, Sasaki was appointed as a manager and head chef of a restaurant.
- 1997年（36歳）独立して祇園に出店。 In 1997, Sasaki opened his independent restaurant in Gion; the most prestigious and classical section of the historic city of Kyoto.
- 2002年（41歳）祇園に２店舗目に移転。 In 2002, Gion Sasaki has relocated to second location in Gion.
- 2006年 (45歳) 現在の店舗に移転。 In 2006, Gion Sasaki has relocated to its current location in Gion.
- 2009年 (48歳) ミシュランガイド2010 二つ星獲得 In 2009, Gion Sasaki has won two stars on the Michelin Red Guide for Kyoto and Osaka.
- 2010年 (49歳) ミシュランガイド2011 二年連続、二つ星獲得 In 2010, Gion Sasaki has contiguously won two Michelin Red Guide stars.
- 2019年 (58歳) ミシュランガイド2020 三つ星獲得 In 2019, Gion Sasaki has contiguously won three Michelin Red Guide stars.
